If you want to do something even more fun with your grits, consider making a Layered Cheese Casserole, Breakfast Egg Casserole or Southern Stir-Fry.
For the amount of cooked grits that you want, place the same amount of salted water in a pot (adding a tsp of lime water if you have it) and bring it to a rolling boil.
Add either white or yellow (or blue or red) cornmeal while stirring madly or using a hand-blender until it thickens to the point of spitting.
Take it off the heat, you're done.
For every cup of plain grits you have - just off the heat - add between a quarter and a half cup of shredded cheese. Blend like hell, until it turns fluffy.
Grits will "set" into any shape you have a mold for and take it quite exactly. A mold should be food-safe, of course.
White grits can be painted or tinted with food dyes. The results can be very impressive.
