Breakfast Egg Casserole:

Pre-make this the night before

Take grits (plain or cheese) and stir in diced green and red peppers. Pour into individual casseroles and create a deep egg-sized dent with the belly of a ladle. Refrigerate.

Come morning...

Take the number of eggs that you have casseroles prepared and break them into a bowl. Whisk them together with diced ham, minced green onion and a dash of Tabasco. Pour into the dents, until just full.

Ladle mild salsa on top and bake at 350 degrees for about 20 minutes, or until eggs are done to taste. Garnish with shredded cheese and/or bacon bits and serve.

If you want to do something even more else with your grits, consider making a Layered Cheese Casserole or Southern Stir-Fry.
