Apple Poached Salmon

We love fresh salmon filets...not those U-shaped steaks...the flat filets. Here is one way my husband loves them. Another way is Salmon with Olive Oil.




Ingredients:




Directions

Preheat oven to 350 (F) degrees.

Lay salmon filet on a large piece of aluminum foil.

Slice apple in half and remove core (Or remove the core any way you wish).

Slice cored apple into thin slices, about 1/8 inch or so.

Lay the slices on the salmon filet, covering the flesh of the fish as completely as possible with the flesh of the apple.

Fold up the ends and sides of the foil to create a sealed packet, leaving some room over the salmon.

Cook on a flat pan for about 15 to 20 minutes, depending on size and thickness of the filet.

Remove from oven and let sit for about 5 minutes.

IMPORTANT: Do not open foil until ready to serve.

When ready to serve, open foil, being careful of escaping steam, remove cooked apple and serve salmon.

No other seasoning is necessary. You would think it gives the fish an apple taste, but it doesn't, just gives it a delightful woody kind of taste that compliments the salmon perfectly.
