Red Velvet Cake and Icing

Cake Ingredients:
- 1/2 cup Crisco
- 1 1/2 cups sugar
- 2 eggs
- 2 ounces of red food coloring and 2 tablespoons cocoa, mixed together
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 1/4 cups cake flour
- 1 cup buttermilk
- 1 teaspoon baking soda
- 1 tablespoon vinegar
Cake Directions
Cream Crisco and sugar. Stir in eggs, cocoa mixture, and vanilla. Sift flour and salt together into the mix, adding buttermilk at the same time (alternate between the two until both are incorporated into the mix.) Beat well on medium speed. Fold in soda and vinegar. Pour into three round cake pans. Bake 325 for 20 - 30 minutes. Cool cake in the pan. Makes 3 layers.
Icing Ingredients:
- 1 box confectioners sugar
- 1 block butter (stick)
- 1-8 oz. block cream cheese
- 1 tablespoon vanilla
- 1 teaspoon milk
- 1 cup chopped pecans
Icing Directions
Mix all these ingredients together until smooth and spread on cake.
