Picnic Chicken

Is there anything nicer than cold chicken at a picnic? And nothing could be simpler than THIS recipe:

NOTE: Requires a large ceramic or cast-iron casserole.

Place the chicken in the casserole dish. Pour the sauce over it. Place in a 425 degree oven for 2.5 hours. (Depending on volume of meat - this will do for six to ten large pieces of chicken in my oven, with my particular casserole.)

Take it out of the oven, ensure that it is actually done, not pink, and refrigerate. Once it's cooled, a great deal of fat will solidify. Scoop this out and recoat the chicken with the remaining sauce.

You can package the parts individually for freezing or just leave them in the fridge until picnic time.

Serves many.
