Minted Bulgur Wheat

This recipe is fast and easy to make, and travels well.

This should serve 4 people.

Directions

Heat bouillon to a boil, pour over bulgur wheat and let stand 1 hour. Drain remaining liquid, if any. Stir into bulgur the onions, mint, lemon juice and oil. Stir and season with salt and pepper. Chill at least two hours, stirring often. Garnish with tomato wedges or cherry tomatoes, and mint leaves.
