If you'd like a definitive cheese resource (who wouldn't, Cheese is one of the signs that there is a god) look up Steve Jenkin's "The Cheese Primer." He explains cheese to the uninitiated and is a good reference for the "Fromagier". If you'd like to read up on Italian cheeses, Romano in particular go right to the sheeps mouth, Sini-Fulvi, who are one of the last Roman Exporter's of Romano Cheese. (Most export Romano is made in and around Sicily). They also have authentic recipes on their site.
