Hambone Split Pea Soup

From the Kung Foole archives: "Why would a person who has a large container of Blue Bell Cookies and Cream Ice Cream and a large container of Split Pea Soup eat only the ice cream and throw the fucking soup in the god damn garbage disposal?"

Because (1) said person lacks ethics (the can should go to the local food bank), and (2) pea soup from a can is but a pale phantasm of what Real Pea Soup is like.



Directions:

Take one hambone, with some meats scraps left on it. Simmer an hour in 6 c water. Remove bone, skim stock. Add 1 lb (1 package) well-rinsed dry split peas, one large diced onion, two carrots chopped. Simmer about an hour until the peas have lost most of their texture. Stir well. Add black pepper, but no salt - it will be salty enough from the hambone. Add any ham scraps from the bone. Serve with ham salad sandwiches.

Note that this is thicker than what you would make from the recipe on the pea package. Good split pea soup is thick enough when cold for the spoon to stand upright in it.

This doesn't work as well with other non-cured meat bones. Split pea soup is one of the foundations of good cuisine.
