Florentine Spinach

Directions

Cook spinach according to package directions and drain very well. Saute the garlic in the olive oil. Add the spinach and heat thoroughly. Add the egg and parmesan and stir continuously until the egg is cooked through. Serve hot.

You can also hollow out (but not peel) a few tomatoes, salt and pepper their insides and stuff them with the spinach. Top them with fresh bread crumbs and drizzle olive oil over the works. Bake at 350 F for 20 minutes.
