Devilled Eggs

These being my standard "take to play parties" food, I'll pass along one.

Ingredients:

Boil eggs. Cool. Peel carefully. (Up to here it can be done a day or two ahead, if the eggs are stored in a ziploc bag).

Slice in half, collect yolks.

Mash the yolks.

Add dried mustard (necessary, or they're not "devilled" eggs), maybe 1 tsp/6 eggs.

Add mayo, about in equal volume to the yolks.

Place mixture back in white halves.

Sprinkle tops with paprika. (This need not be either the hot or the good Hungarian mild stuff; it's mostly there for color, so the cheap commercial stuff is okay).

Take to the party in a disposable aluminum tray, so you have one less thing to hassle with getting home.

Additions that I've seen, but don't bother with, are minced onion or celery.

These are good party food, because they're not just more carbohydrate, people don't get them that often because of the labor involved, and they're cheap. Because people know they're cheap, devilled eggs almost always get finished: folks may be worried about hogging the shrimp etc., but they know that devilled eggs are cheap.
