"The Danish Dessert"

Contributed by Marina Muilwijk

Here's a recipe for what my family calls "The Danish Dessert" (because my mother learned to make it while living in Denmark).I will start with the ingredients as used by my mother. Since some of those might not be available worldwide, I include possible substitutes at the end.

Ingredients:

Directions:

Put the apple sauce in a bowl. A glass one works best (since this in going to be a layered dish).

Crumble the "beschuiten", mix the crumbs with the cinnamon and lemon rind. Sprinkle over the apple sauce.

Whip the cream with the sugar. It doesn't have to be very stiff. Spread it over the crumbs.

Serve chilled.

Serves 4 after a solid meal.

Substitutes:

If you can't find "beschuiten", you can substitute anything else that makes nice crumbs (toasted bread, biscuits). Cornflakes or granola probably work as well, but I've never tried that. You need enough to just cover the apple sauce.

If you don't like store-bought apple sauce, you can of course make your own.

Variations:

Before putting on the whipped cream, put the bowl in a warm oven until the apple sauce is warm.

If you'd rather not use cream, try plain yoghurt. The effect is different, but still yummy.
