Melt the butter in a large skillet. Saute the onions in the butter until soft. Sprinkle with sugar and keep sauteing until the onions are carmelized (They will be a lovely glossy tan). Preheat the oven to 425 F. Sprinkle your pizza pan heavily with cornmeal and lay out the crust. Mix the chipotle sauce with the tomato paste and spread over the crust. Pile on the chicken, cheese, onions (and peppers). Bake until the crust is brown and the cheese is bubbly.
