Cherry Friands

Ingredients
- 185g butter - melted
- 6 egg whites beaten lightly
- 1 cup almond meal (100g ground almonds)
- 1 1/2 cups icing sugar mixture (250g)
- 1/2 cup plain flour (75g)
- 500g cherry - fresh pitted
Directions
- Preheat oven to moderate hot (200degC)
- Grease 12 small rectangular pans or a 12 hole muffin pan (1/3 cup capacity)
- Put butter, egg whites, almond meal, sifted icing sugar in a bowel; stir to combine.
- Divide mixture among the pans; sprinkle with the cherries.
- Bake for about 25 minutes
- Turn onto a wire rack to cool
- Dust with icing sugar if desired.
Notes:
This recipe makes 12 Friands. Suitable to freeze. Not suitable to microwave. This recipe can be prepared two days ahead.
