Caviar Torte

Ingredients

Notes: If calories are an issue, low-cal mayonnaise may be substituted. If budget is an issue, good results (and beautiful visual effect) can be effected by using tobiko (flying fish roe.) .

Directions

With a fork, mix well the eggs, mayonnaise, onions, cheese and sour cream. Spread evenly in a 9 inch spring pan. Cover and chill at least 4 hours, or up until next day. With a spoon, drop caviar in small dollops evenly over cheese mixture. Gently spread in a smooth layer, using a long spatula. Remove pan rim; place torte on a platter.

Garnish with parsley and lemon slices, spoon onto crackers to serve. This recipe should serve 16 people.
