Killer Vegetable Broth

It's not a very good recipe for people who want exact amounts but it did turn into an incredible broth (fat free, too). Even my husband, who isn't into healthy stuff at all, tasted this stuff and begged for a bowl

Put the roughly chopped veggies in a pot and add just enough water to cover them. Simmer veggies for 12 hours (or however long is convenient), use a slotted spoon to remove some of the veggies to make room enough to stir in the garlic, chopped fresh and dried herbs. If it isn't the right time of year for good tomatoes or you can't find Romas, add some tomato paste to taste (I like the Bionaturae Precious Tuscan Tomato Paste myself but tastes differ). Simmer for another half hour or so, then strain through 4 layers of cheese cloth.
